I have been in a very slow cooker mood lately. Mind you, I haven’t actually pulled our Crock-pot out more than a dozen times over the last year, but that is just because I have been awful at meal planning and prepping.
Is that something you do consistently? If so, I truly wish I could say the same.
I usually have time on the weekends to put a solid plan of attack for the week together, but it’s the motivation I’m lacking. Week after week, I think of meals I want to try or new recipes to throw together and I find myself doing one of two things:
1) I go to the store and buy the things I need for that specific lunch or dinner
2) I pull the “I don’t want to go to the store” card and skip that specific idea all together
As I am currently sitting in the lobby of the Jeep dealership (time for an oil change!), I can’t help but peruse the endless slow cooker recipes I see floating around Pinterest. In fact, I finally started a Slow Cooker Recipes board. It was well overdue.
I am planning on stopping by the grocery store as soon as I get my car back, but now I just want to try all the slow cooker things.
Really though. There’s just too many great ones to pick from.
Should I go the easy route and remake one of my own soup recipes?
(a few faves)
• Slow Cooker Chicken Tortilla Soup
• Simple Slow Cooker Beef Stew
• Slow Cooker Split Pea & Ham Soup
Should I try something I saved online?
• Shrimp and Artichoke Barley Rissotto via Cara’s Cravings
• Slow Cooker Stuffed Bell Peppers via SparkRecipes
• Slow Cooker Teriyaki Chicken via Gimme Some Oven
Cook something I saw on another blog?
Courtney is always posting something I want to make!
• Julie’s Crock Pot Garam Marsala Chicken & Chick Peas
• Anne’s Ridiculously Easy Chicken Crockpot Curry
• Gina’s Slow Cooker Shredded Mexican Chicken
Should I try something I pinned?
• Chicken Enchilada Quinoa via Bobbi’s Kozy Kitchen
• Crock Pot Veggie Lasagna via Weelicious
• Chicken Tuscan Stew via Sweet Peas & Saffron
I seriously want to make everything. I am a bit overwhelmed and don’t even know where to start.
Okay, so I’ll pick one. Baby steps. Maybe it will be an original creation, maybe it won’t. We’ll see how creative I feel while walking the aisles!
Welp, my Jeep is ready. I better run! I’ll be sure to share any successful dinner creations with you in the future. Have a great rest of the day!
Question of the Afternoon
• What is one of your favorite (easy, somewhat healthy) slow cooker dinner recipes?
Leslie @ Life Begins at 30?
If you want a combo of stuffed peppers and soup, this skinny taste recipe is great! I have made it a couple of times. http://www.skinnytaste.com/2011/12/stuffed-pepper-soup.html
That looks SO good, thanks for sharing!

The Crock Pot is my best friend. I make at least one Crock Pot meal a week. I made a Mongolian Beef recipe last night for the first time, and it was a total winner. Another one of our favorites is Chicken Wild Rice Soup (I’ve talked about it on my blog before and it’s pinned on my Crock Pot Recipes board). Other tried and true easy favorites are BBQ chicken sandwiches, buffalo chicken sandwiches, chicken fajitas, Italian beef sandwiches, and soups galore!
Yum, those all sound so good! BBQ sandwiches are great in the crock pot! Chicken fajitas are also on my list! Great suggestions 🙂
LOVE the crock pot! I just threw this recipe together this morning, and while we won’t have dinner for a while, yet…it smelled AHHHMAAZZZING when I walked through the door after work. I have a feeling it’s going to taste delicious too!
Ahhh walking into a house that smells like dinner – or even better, dessert – is the best! Cajun roast sounds delicious!
The crockpot is my bff! I cannot wait to try the Chicken Enchilada Quinoa & Chicken Tuscan Stew! One of the favorite recipes around our house is Chicken Salsa, super easy peasy! Here is a link to the recipe on my Pinterest page if you wanna try it out 🙂 http://www.pinterest.com/pin/75153887507623096/
Yum, anything with chicken & salsa sounds like a win to me!

I absolutely love my slow cooker, but like you, rarely use it. I really want to get back into the swing of cooking meals in it to have on hand throughout the week or for a day I won’t have time to cook dinner since it makes the evenings go by a whole lot smoother. It’s just a matter of going to the grocery store and buying all the ingredients now… haha
Exactly. I’m such a spur of the moment meal planner. I hope to change that habit this year!

I love these sweet potato and Black Bean Burritos – so flavorful and easy!http://www.kalynskitchen.com/2012/03/slow-cooker-recipe-for-sweet-potato-and.html
Um… YUM!!! Thank you for passing this info along!

I say try one of the new ones you saved! If the ingredients sound good – you can’t go wrong!
There’s so many great ones I hope to get to some day!
I would be nothing without my slow cooker! I make shredded crockpot chicken every Sunday to add to salads. Just put 3 chicken breasts in the slow cooker + 1 C chicken broth + salt, pepper, garlic salt, oregano, onion powder. Cook on low 5-6 hours or high 3-4 hours and shred. So good!
Haha, I love the dramatics. It really can be a lifesaver at time! That shredded crockpot chicken is a fantastic idea!
