Good morning friends! How was your weekend?
Ours was very low-key… again. I guess that’s what our Saturdays and Sundays become this time of year! But, with temperatures in the teens can you blame us?
As much as I love catching up on things around the house, I’m not going to lie… I really, really miss being outside. This is the time of year where I truly question why it has to be so cold that people literally hibernate. I barely see anyone doing anything besides power walk to and from their cars and (insert store/restaurant here) as quickly as possible, and if I do see a runner or biker, I question their sanity. (You go, hard core workers!)
Despite the cold temperatures, we tried to get out and take Roadie for “long” walks… but we didn’t make it very far. Let’s just say I’m really looking forward to warmer months ahead. Anyone with me?
Anyways, let’s move on from talking about the weather and cover the weekend. Like I mentioned above, we didn’t get out too much… so this recap mostly involves food. I hope you enjoy a look into what we’ve been enjoying lately!
Friday
I finished up working at the gym around 6:30 p.m. on Friday. We had plans to meet some friends for dinner, so I brought clothes with me to change and Scott picked me up to be on our way. We agreed on a new-to-us place called Sy Thai, and we were the first to arrive at 7. We took a look at the menu and munched on whatever those colorful wafers were.
We eventually ordered a fresh roll appetizer. Scott asked for a side of Sriracha and that combo was delicious!
After waiting for a half an hour, we finally figured out that we were at the wrong location. There is another Sy Thai in Downtown Birmingham! Hehe. Whoops. We politely asked for our check and headed out to meet our friends at the correct location.
It took us about fifteen minutes to get there and park, so we asked them to order for us. I picked the Pad Thai with chicken.
Per usual, there was plenty to go around, and I enjoyed the leftovers the next day as well. Yum!
Saturday
We headed home after dinner so I could turn in early for work on Saturday. I taught two classes and trained a client before Noon. I like starting my weekends off on a productive note!
When I got home, I heated up dinner leftovers, changed, and cleaned up a little before we had to leave for a matinee.
Side note: Do you guys go to matinees? We’ve been preferring earlier times if we can swing it because they’re practically half the price.
We saw The Revenant which was really hard for me to watch at first. I’m not a fan of gory movies, but I got over it and appreciated the film for what it was. Amazing. Leonardo DiCaprio is one talented actor. I do have to wonder how he always gets the films where he’s basically being tortured in the freezing cold snow and water, though. Poor guy.
After the movie, we stopped by the grocery store to pick up some essentials for the week and then retired to the couch for the rest of the night. I told you… we’ve been super active lately. Ha.
The fur babies don’t seem to mind the extra snuggle time.
Sunday
Our Sunday started a little different, as we chose to attend a later church service at a new location. Our church has several locations, and we always bounce between two of them. Yesterday, we decided to try out the Birmingham campus and had plenty of time for breakfast before we left at 10:20 a.m.
Nature’s Path waffles topped in Earth Balance (vegan) butter and pure maple syrup with a side of hardboiled egg, berries, and orange juice.
I waited until we arrived for my usual Sunday morning cup of coffee, since I love the Great Lakes brand. While I was in line, I noticed a very patient man with a large family in front of me. He ordered about twelve things and was in the best mood. Unbeknownst to me, he also paid for my coffee (or whatever I wanted), which was really sweet.
As soon as I found out, I thanked him for his kindness and loved the reminder to pay it forward. <3
We kept things low-key for the rest of the day. We ran some errands and attempted to take Roadie for another “long” walk when we got home.
We didn’t make it too far past the main field though. All three of us were freezing!
To help warm us up, we made one of our favorite lunches.
Grilled cheese (with Havarti jalapeño and shaved chicken) and a bowl of Amy’s butternut squash soup with a side of sliced pickle.
We attempted another walk before dinner, but again… freezing.
Needless to say, we gave up and retreated indoors for the rest of the day. I cleaned the house and spent some time organizing in the basement. Scott took charge of dinner and made a delicious steak and potatoes combo.
Braised short rib, homemade mashed potatoes, and a side of baked beans.
We would normally trade the beans in for something a little more green, but they were in the refrigerator and needed to be used up!
So yeah, our weekend pretty much revolved around food. Andddd I guess we’re all caught up!

Questions of the Day
• What are some things you do to fight the winter blues?
• What was your best meal (in or out) this weekend?
Happy Martin Luther King, Jr. Day (thank you for all you have done for our country almost 50 years ago) and have a great Monday!
Jen @ Pretty Little Grub
I much prefer matinee movies because I hate staying up so late for evening movies. My husband wanted to see the Revenant yesterday but we didn’t get around to it. Sounds like it’s worth seeing.
Heather
Yes, it is! My husband is one who easily falls asleep at the movies, so the afternoon showtimes usually help with that 😉

All that food! Yum!

Yep, I totally agree with you – can`t handle with cold weather either. But I think winter is a great time for cozy blanket and comfy food, so not complaining about that 😉

Haha! Your weekend looks a lot like ours. We kept trying to get outside to do active things, but we are a bunch of babies when it comes to the cold. We had plans to go cross country skiing today, but it is freezing rain/snow outside so that isn’t an option either. We tend to stick with indoor things like rock climbing and movie watching during these long months. Summer can’t come soon enough!!

Very true! I think it would be great to have a membership to more gyms and studios like rock climbing, yoga, and barre. I would definitely have more motivated to stay moving!
Erin @ Erin's Inside Job
We always go to matinees when we go to the movies. There’s usually not a lot of people there, they’re cheaper, and we are basically 90 years old.

Haha, don’t worry – you’re not alone. We’ve been acting like old souls a lot lately… 😉
Kelly @ Kelly Runs For Food
I basically lose all motivation when it’s cold out! My workouts have basically only consisted of hot yoga and barre classes lately, so I can just be close to a heated room haha.

Ahhh hot yoga sounds amazing! I used to love working out and then just sitting in the steam room at my old gym afterwards. It feels so good to sweat like that in the cold winter months!

Sometimes lazy days are the best. And can I just say that all of your food looks amazing!!! 🙂

Thanks Rachel! I sure could go for another grilled cheese right about now… 😉

I’m totally with you on wanting the warm weather back! I also tried a few walks this weekend and it was basically a small loop around my neighborhood and running back inside.

Right? It’s good to hear that I’m not the only one with a tight radius to my house right now, lol.

I feel you on the cold weather! I live in Manitoba, Canada and for the past 2 weeks it’s been -20 to -40 degrees celsius. That means leaving the house isn’t my favourite option although I do still walk 15 minutes to and from work. My favourite winter activities include reading or crafting with lots of tea and warm blankets! Or cross country skiing when it’s a bit warmer 🙂
Heather
Tea (or any warm beverage) and warm blankets are a must around here!

LOL those are pork rinds- like fried pork skin! I always thought they were so good until someone told me what they were
Heather
Ummmm… I hope you’re wrong. lol. Ahhh!

That was so nice of that man to pay for your coffee; there IS still kindness in the world <3 That breakfast of waffles with vegan butter and berries looks delish! It has been freezing here and I've been fighting those winter blues with a lot of warm coffee and fuzzy socks/blankets. Hope you have a great day!

I know, it was a really sweet gesture and great surprise. Warm blankets and fuzzy socks are a staple this time of year!

I am all about the lazy weekend, so your weekend sounds perfect to me. Love that photo of Roadie all snuggled up with you! And your Pad Thai looks amaaaaaazing! It’s one of my favorites, and it’s always best freshly made, I think. Hope you’re having a great Monday!

I’ve been loving low key weekends lately 🙂 Looks like you had a great one!
Heather
We did – I am, however, looking forward to some warmer weather to at least be able to take walks and attempt running again, lol. Have a great week, Giselle!

Ok that restaurant thing you guys did, I totally have done! Luckily it was just a panera so I could grab to-go cups for my soup, but so so embarrassing haha.
Heather
Haha, it’s comforting to know that I’m not the only one who has done that. Whoops! Ahhh, love Panera. <3

Oh my god, temperatures in the teens? Yikes! I was freezing my butt of this morning in Florida and it was only 38 degrees out. I saw the Revenant last weekend with my boyfriend and I agree, some things were hard to watch, but overall I thought it was a very well done movie 🙂
