Hello friends! I apologize for popping in a little later today.
There’s a good chance that a lot of you will be reading this over your lunch break, so let’s dive right into the food for another edition of What I Ate Wednesday!

What I Ate Wednesday Tuesday
My morning started by sleeping through Scott’s 6:30 a.m. alarm to go to the gym. I usually join him on Tuesday and Thursday mornings, but I have been taking advantage of my membership to the barre studio and going to a later class instead. He understands.
He returned around 7:45, and I finally rolled myself out of bed to get ready for work at the day care. (I have been working at the nursery at church six hours a week for the last couple of months. I love it!) I quickly assembled breakfast to-go, then left soon after.

It was a fun-filled morning of chasing two-year-olds around, and I’m pretty sure I wiped about sixty noses. Cold and flu season is here, y’all!
I finished my three hour shift and brought my gym clothes with me to drive straight to a Noon class at The Barre Code.
It was a great, challenging 50-minute session filled with lots of shaky movements and muscles.
(Gotta love that barre burn!)
I forgot to pack a snack with me to get me through the morning, so I was more than ready for lunch by the time I arrived home. I devoured about half of this bag of Turkey Jerky to hold me over while I made something.
I go through phases of eating it bags at a time to not touching it for months. Apparently, I’m on the bags at a time phase again.
Thanks to a bag of pre-assembled chopped salad, lunch came together in a flash.

That kept me satisfied for a few hours while I worked on the computer throughout the afternoon. I eventually started craving fruit (it had been a few days since a large fruit serving… I know, who am I?), so I put a small fruit bowl together before heading out to work at the gym.

I had a three hour shift that included a 1-on-1 appointment and two small group training classes, and I had just enough time to break into my bag of almonds in between sessions!

I’ve mentioned this before, but just in case you’re wondering, I don’t work out during my appointments or classes. I set up circuits, get all of the equipment out, demonstrate exercises, and correct form throughout the classes. In fact, I stay pretty bundled up around this time of year in my zip-up and puffer vest (pictured above)!
My normal 8 p.m. class was cancelled, so I ran a few errands before heading home for the night. Scott was out with friends, so I took it upon myself to empty the refrigerator of leftovers and create anything that made sense for dinner.
Spanish rice, a small portion of Amy’s spicy chili, and Al Fresco chicken sausage topped in shredded cheese
My little rice bowl was a little random, but it was surprisingly delicious!
Per usual, I poured myself a tall glass of dark chocolate almond milk over ice before bed, and not as usual, I turned in early by 10 p.m. (Again… who am I?)

I hope you enjoyed a behind the scenes look into a typical day of eating around our house. As you can probably tell, I’m not much into meal planning or prepping right now. I’m sure I’ll jump back into it one of these days, but for now, I’m rolling with my days as they come and go.

I love that you go to the Barre Code! I feel like it’s one of the smaller barre franchises so I don’t hear about it that often, but I’m completely addicted. Such a great toning workout and it’s not something I have to really motivate myself to get to, except the HIIT classes sometimes 🙂

I love the variety of classes! My favorite style is the classic “The Barre Code” barre, but I love that I could sign up for a boot camp, HIIT, kickboxing, and even yoga depending on what I think my body needs!
We made pizza a few days ago but I didn’t like my crust. The toppings were good so instead of letting them all go to waste the next day I peeled off the toppings and heated it in a tortilla then rolled it all up. It was delicious but definitely strange 😉

I love love love you and your puffer vests! You always rock the cold weather, and if I lived in a colder climate than San Diego, I would be channeling you for all of my fashion. You always know how to make function look adorable (and warm!)

my favorite dinners are where i just throw random stuff in a bowl and mix it! They just happen to be the most satisfying! Your dinner combo looks extra tasty especially with the alfresco chicken sausage! Yum!

I always think that a salad makes the best vessel for anything. Leftover roasted veggies, proteins, fruits, nuts, w/e you have one hand can be tossed into one and the more you add, the better they always seem to be! Post- Thanksgiving salad beast? Yes please 😀
I totally agree! I can’t tell you how many “salads” I make out of whatever. And I love the “salad beast” label. Ha!
