Good morning!
It’s Hump Day, and yesterday I realized that is has been months since I covered a What I Ate Wednesday post. Since WIAW is a series that several of you requested I bring back with my return to blogging, here goes!
Longtime LIL readers will probably remember these posts because I’ve shared over a hundred of them. According to the comments and messages I’ve received via social media, simple, unstructured, unplanned looks into a day of my regular eats seem to interest you. I don’t set much time aside to document my meals or recipes these days, so this is a great chance to share those quick and (usually) healthy meals from time to time.
The last WIAW post I shared covered a random Tuesday back in September when we were in the heart of pre-sales and preparing to open the studio. It’s been a while, and now that we’re open, my day-to-day schedule is a little more structured. Structured, yet unpredictable, if that makes sense. I think it will be interesting to turn back and see how much days change as time goes by, so thanks for clicking over to read, too.
Now onto the eats!
What I Ate Wednesday Tuesday
(Here’s a glimpse into my Tuesday eats and activities)
Every day at work is different, and this week I started my Tuesday by opening the studio bright and early. I usually walk to work, but when it’s still dark outside at 5 a.m., I treat myself to an Uber ride. While I was getting ready at 4:30, I quickly threw one of my favorite breakfasts together to start the day off right.

The picture is actually from the weekend since I make this breakfast often. I always pair it with a comforting cup of coffee with almond milk and a tall glass of water. I feel best when I start my day with several gulps of water before and after my coffee!
I arrived at work by the first workout start time at 5:30 a.m. and kept busy throughout the morning. Five classes later, I knew I would still be around throughout the afternoon and decided to hop in one myself at 10:30. I don’t always do that, but if everything is under control up front and there’s room, I take advantage of working at a gym when I can!
The workout focus was E.S.P (endurance, strength, power), and it was a good one with hills and sprints on the treadmill. We’re currently in the OTF Marathon Challenge (are any of you participating in this?), so I tracked my mileage for the hour and spent a few minutes foam rolling afterwards.
I had a few minutes to hop in the shower and get ready for a conference call, so I did just that. It really is nice to have those amenities at work! After my call, I went downstairs to heat up the stir-fry I made over the weekend for lunch. We had some vegetables going bad in the refrigerator, so I steamed broccoli, snap peas, and carrots and mixed them in with rice and scrambled eggs and put enough for three servings in a Tupperware to heat up at work.

Instead of drowning everything in soy sauce, I opted for liquid aminos. I wrote about liquid aminos a while back and have been enjoying the substitution ever since. You should try it!
By 4:30 p.m., it was time for me to call it a day and head home. I didn’t get to the snacks I packed with me to eat at work, so I grabbed a delicious pear and leftover popcorn Scott made on the stovetop the night before for my walk home. Yum!
I ran a few errands on the way home and couldn’t help but to notice the beginning of spring in the air. Look at those cherry blossoms!
My last stop before home was at Chipotle. I knew that I wanted something hearty for dinner (thank you, #orangetheoryafterburn), and since Scott was working all night I turned to an old favorite to-go.

I usually add rice to the order, but figured I’d had enough at lunch. Instead, I dipped a handful of unpictured corn chips into the bowl and treasured every last bite!
I cleaned up around the house after that and started drafting this post before grabbing my nightly treat. I’m a sucker for dessert, and have been grabbing pieces of chocolate bars and a big glass of milk lately.
This time it was Lindt dark chocolate and almond milk mixed with regular organic skim. Yup, I buy both and mix versions of milk and them. Is that weird?
I worked on some graphics and posts for my former gym’s social pages, finally put my computer away at 10 p.m., walked Roadie, and turned in shortly after. And just like that, another Tuesday was in the books!
Since I currently work six days a week, I usually take Wednesday mornings to myself and get to work around Noon to work the closing shift. It’s been nice having some extra time to catch up with y’all, and I hope you have a wonderful rest of the day.

Clearly, Chipotle is one of mine. I don’t usually get to dine at or order from anything but local spots in my neighborhood, but every once in a while I will crave something that reminds me of home. Some chains I miss that I would regularly order from back home are Chili’s and Olive Garden. (<- unlimited soup and salad lunches are pretty amazing, right?) And I couldn’t leave without mentioning a good ‘ol Publix sub, too. THE BEST.

Please note: What I Ate Wednesday features an entire day of my unfiltered eats. In no way do I change what I eat just for the sake of documenting it. While I try to be mindful with portions, I don’t count calories. I do, however, take into account how much activity I am going to be doing that day, and I plan my meals and snacks accordingly.

I started OTF in September and am OBSESSED. It’s such a good workout!
Participating in the marathon challenge – I’m transitioning from a power walker/jogger hybrid to a jogger/runner hybrid so the 26.2 mile goal is a big one for me this month! (Considering I usually get 1.5-2 miles per workout logged).

It’s not too often that I’m on the go for supper but if I am I go to Jimmy John’s for a roast beef sandwich with the added cheese and mayo. Treat yo self right? I have never cooked with liquid aminos but I will be giving that a try the next time I make stir fry!

Chipotle is also my go-to grab for a meal on the go – it’s one of the places I know I can get a macro-friendly bowl! We also have a Mezzeh – similar in concept to Chipotle, but it’s Mediterranean food!
