Hello, hello! How has the Hump Day been treating you so far?
Mine’s been rolling. I’m actually finishing things up and coming to you from the gym, but I didn’t want to close out the day without checking in for What I Ate Wednesday. Better late than never, right?
Have no idea what I’m talking about? This post breaks it all down!
(And just to throw this out there for the newbies…)
WIAW features an entire day of my unfiltered eats. In no way do I change what I eat just for the sake of documenting it. While I try to be mindful with portions, I don’t count calories. I do, however, take into account how much activity I am going to be doing that day, and I plan my meals and snacks accordingly.
What I Ate Wednesday Tuesday
Wanting to use up some of the English muffins floating around our fridge, I made Scott and I healthified breakfast sandwiches for breakfast yesterday.
Egg whites, a few sprinkles of shredded cheese, chicken & maple breakfast sausages, and cherry pepper jam on an English muffin with the usual morning cup of coffee.
That did the trick in keeping me full until late-morning. I stayed busy working on the computer and came up for a snack around 11. I grabbed a couple of cuties with a side of Roadie. He just might be my favorite cutie of all.
(Umm… don’t mind the cat hair. Wow.)
I had some cancelations at the gym in the afternoon, so I enjoyed taking a long lunch while catching up on my Health reading.
I wanted soup, but I also wanted some substance before a run I planned on taking later that day. I pulled a classic move of adding spinach to it before I dumped it over noodles and loved every bite.

I will basically eat anything over noodles, but that was pretty dang good!
I continued to work on the computer throughout the afternoon and stopped for an afternoon snack around 4 p.m.
Celery and crackers with a side of roasted red pepper hummus.
By the way, the new Balsamic Vinegar & Basil Triscuits (too new for a link!) flavor is delicious and addicting. Just sayin’.
I wanted to take Roadie for a run, but it started raining as soon as I got ready to go. Don’t you hate when that happens? I took my workout to the basement instead, and almost died in the process of completing this 25 minute Cardio and Core Tabata. Those 8 sets of 20 seconds on and 10 seconds off are killer!
It wasn’t too long before a friend of ours came over to teach a yoga class! He is currently in the process of getting certified, so he needed a few test subjects to provide feedback. I was more than happy to take with my friend Hannah, and it turned out to be an awesome class. I even balanced in my headstand for the first time!
As soon as we finished, I threw an already assembled dinner into the oven, thanks cooking with Blue Apron over the weekend. I kept it in the refrigerator, so I heated it up for about 20-30 minutes before it was ready to serve.
It might have tastes even better after a day of letting the flavors all sink in. I probably cooked it a little too long, but it was still great!
That kept me satisfied until Scott got home from work around 10 p.m. He ate dinner while I enjoyed dessert.

You just introduced me to Reese’s Peanut Butter Oreos. I am not a fan of normal Oreos, but I am definitely going to be on the lookout for those babies right there. Sounds delicious! and dreamy indeed. 😉
They are ridiculously good. And, fun fact, Oreos are vegan. Haha! 🙂
Ohmygoodness Reese’s peanut butter Oreos?! We have regular pb Oreos here that are amazing but I feel like anything Reese’s would be even better!
Yes!!! The inside layer is half Reese’s PB and half chocolate. It’s pretty epic.
Oh man, how are those Reese’s Oreos?! Better than the regular or PB ones? May have to scope those out next time I’m at the store!
YES!!! Amazing. Can’t get enough of the Reese’s PB mixed with chocolate filling!
I hate it when it starts raining as I am about to go run. Such a bummer! Sounds like you got in a good workout anyway. 🙂 I love chocolate almond milk after a nice workout..or any time of the day. YUM.

Hi Heather! You might have already said this, but were there lots of leftovers from your Blue Apron Meals? I am thinking of trying it but definitely would want the meals to last for leftovers for my husband and I.
Ha….your cat hair comment made me laugh. I recently saw this “what’s in my bag” feature in an in-flight magazine, and the guy that wrote it had a lint roller at all times because he had recently looked at pictures of himself and realized he always looked like he “rolled around in a dog park” 🙂 I always do too! Between my cat and dog they keep my clothes full of hair!
Peanut butter oreos?! YUM! My husband would probably go crazy for those haha. And isn’t Blue Apron awesome? I love their boxes!

I love how you throw things in noodles..I used to always do that, to the point of once adding cold leftover takeout noodles on top of ramen noodles.. Oh University days! Those oreos look insane!
Haha, that actually sounds amazing. I seriously can’t get enough of the Oreos. It might be a problem 😉
